Potage d’Agneau â l’Estragon

Flavorful Hungarian style spring lamb soup seasoned with paprika and tarragon. Served with a side offering of sour cream.


Salads

Salade d’Agrumes

This morning’s market provided fragrant navel oranges from Florida.
We present them tonight as a salad along with thin slices of Vidalia
onions and fresh fennel on watercress, dressed with a simple red wine vinaigrette.

Salade de Poires

Poached asparagus, served cold with spelt, an early ancestor of wheat,
accented with an orange vinaigrette and garnished with chopped eggs and
a petit dollop of curried whipped cream.
